Red Lentil Broccoli Mac & Cheese Recipe

The Mr. took me on a date night recently. We hit up a new local restaurant and it was SO good. I had the grilled salmon. Whoever their grill person is, they are a grill master and should be awarded the key to the city. After that, we went to a local "beer garden". I drink wine. Not beer. BUT - they have some really good options for non-beer drinkers. I had a pineapple cider and it tasted almost like a pineapple sangria (if that even exists..if not, we should totally make it.)


I try and attempt to make vegetarian meals a couple times a week. I would do it more, but my man is a hard core carnivore. This week I made a real winner:


The lentils really beef up the dish and make it super filling and satisfying. It also couldn't be any faster or easier to prepare.


All you need is a cup of red lentils, a box of your favorite mac & cheese, and 2 cups of broccoli florets (fresh or frozen). Prepare the mac as directed, but dump in your lentils WITH the noodles. They will cook up together. For the last 2 minutes of cooking time, throw in your broccoli (you may need to up the time if using frozen). Drain and mix with the cheese sauce and DONE!
