Weekends are my downfall. I cook and eat good, clean, healthy foods during the week. Then the weekend hits and it's chips, burgers, hot dogs, wine... you get the picture. To start off this week on the right track, I want to share this healthy and SUPER tasty Roasted Veggie Quinoa Bowl. It's full of healthy sesame roasted vegetables, served over quinoa and drizzled with a flavorful peanut sauce.
Use whatever fresh vegetables you like or have on hand. In mine, I used broccoli, cauliflower, carrots and zucchini. Chop them and toss in olive oil on a baking sheet. Roast in the oven at 425º for around 25 minutes. When you bring them out of the oven, drizzle a little bit of sesame oil (around a tablespoon) and sprinkle with sesame seeds.
Meanwhile, Cook your quinoa according package instructions. Keep warm.
Serve roasted vegetables over quinoa and drizzle with peanut sauce.
