Chicken Philly Cheese Steak Stuffed Potatoes

I love merging together different dishes that I enjoy and seeing what comes out. Let me tell you, I think we have a winner! I love chicken cheese steaks and I'll take anything stuffed in a potato. It's so easy and fast. Especially if you bake you're potatoes in the crock pot during the day (just wrap them in foil and set it on low). The chicken, onions and peppers broil in the oven together, which means for easy clean up.

Preheat the broiler to high. Season the chicken with salt and pepper and slice your peppers and onions.  Add them all to a foil lined baking sheet. Broil 7-10 minutes or until chicken is cooked all the way through.

Cut open the potatoes. Spread a little butter and sprinkle some salt and pepper. Then, top with peppers, onions, chicken and then a slice or two of provolone cheese.

Broil until cheese is melted and bubbly.

Serve with ranch or sour cream and a veggie on the side. Dinner is served!

Chicken Philly Cheese Steak Stuffed Potatoes

makes 2
Ingredients:
  • 2 Large Baking Potatoes
  • 2 Large Chicken breasts
  • Olive Oil
  • 1 Onion
  • 1 Bell Pepper
  • 1 Tbsp Butter
  • Salt and Pepper to taste
  • 2-4 Slices Provolone Cheese
Directions:
  1. Bake potatoes. You can use the oven, microwave or crock pot. Set aside.
  2. Preheat broiler on high. Cover baking sheet with foil and set chicken breasts on one side and pepper and onion on the other side. Drizzle chicken and veggies with olive oil and season with salt and pepper.
  3. Broil 7-10 minutes or until chicken is cooked all the way through. Remove and slice chicken. Remove and set veggies to the side.
  4. Lining pan with a clean sheet of foil, lay open potatoes and spread butter on them. Season with salt and pepper. 
  5. Layer peppers, onions and chicken on top. Cover with 1-2 slices of Provolone cheese.
  6. Broil a few minutes or until cheese is bubbly and starting to brown.
