Simple Parmesan Crusted Chicken with Roasted Potatoes

This is a quick and easy meal to put together. There are a lot of versions of this online, but I've made it into an entire meal by heating up caned green beans on the stove and roasting potatoes along side the chicken. With minimal prep, you've created a delicious meal with not much work! Great for days when you just want to hide in the pantry with a glass of wine... not that I've ever done that....

Line your pan with foil. On one side is the chicken, and on the other side place you're potatoes. It's important to cut the potatoes on the small side so they will cook completely within the time frame. Just heat up some seasoned green beans to round out the meal.

Simple Parmesan Chicken

Ingredients:
  • 2 Chicken Breasts
  • Salt and Pepper
  • 1/4 Cup Shredded Parmesan Cheese
  • 1/4 Cup Mayo
  • 1 Tbsp Seasoned Italian Bread Crumbs
  • 1 Can Green Beans
  • 3 Tsp Garlic Salt
  • 2 Large Potatoes
  • 1 Tbsp Olive Oil
Directions:
  1. Preheat oven to 425˚. Line a large sheet pan with foil. 
  2. Wash and cut potatoes into small cubes (smaller cook faster). Place on foil lined pan and toss in Olive Oil and 2 tsp Garlic Salt. Scoot potatoes to one side of the pan.
  3. On the other side of the pan, place your 2 chicken breasts & season with Salt & Pepper.
  4. In a small bowl, combine Mayo and Parm Cheese. Top each breast with the Mayo mixture and sprinkle with Bread Crumbs.
  5. Cook potatoes for 20-25 minutes or until potatoes are tender and chicken is cooked through.
  6. Heat Green Beans seasoned with 1 tsp Garlic Salt on stove top until heated through.
