Easy Mojo Burrito Bowls

Let me begin by stating how "on point" I've been lately. Do you ever have one of those weeks where you just can't seem to do ANYTHING right? Well, that's been me. I got my inspiration for this dish from Chipotle (my FAV). We got take out the other night because someone (me) put dinner in the crock pot and FORGOT to turn it on! I was SO mad. It had sat out for over 4 hours by the time I noticed. I went ahead and turned it on high, but both my mom and husband said it probably wasn't a good idea to eat it. So I regretfully dumped it out (it being chicken tacos..) and had the hubs stop by Chipotle for take out. Thinking it was funny, I even tweeted my disaster and Chipotle replied!


Well, on to the dinner. Let me state the obvious that my "burrito bowls" are not in bowls. I also could have sworn that I had corn in the freezer, so my photos are missing that, too. I told you it's been a week!
 Easy Mojo Burrito Bowls.
Start by marinading your chicken in Mojo marinade. This stuff is the bomb. You can find it in your grocery's ethnic section or where they keep all the yummy Mexican food. Marinade your chicken for a minimum of 30 minutes for optimal flavor.
Then it's just a matter of grilling up and slicing the chicken to top you're rice and beans. So easy and tasty. Add in whatever ingredients you would add to a burrito. You could even do Spanish rice instead of white or brown. I like to mix in Cilantro and a few squeezes of lime over all of it.

Easy Burrito Bowls

Ingredients:
  • 1.5 - 2 lbs Chicken breasts
  • 1 Cup Mojo Marinade
  • 1 Can Black Beans
  • 2 Cups prepared brown or white rice
  • 1 Cup Frozen Corn
  • Optional: Guacamole, Sour Cream, Shredded Cheddar, Cilantro, Salsa
Directions:
  1. Place chicken in a zip top bag or Tupperware. Pour Mojo marinade over chicken and marinate in fridge for at least 30 minutes. 
  2. prepare rice per directions
  3. On a oiled grill pan (or skillet) grill chicken until done. Place on a cutting board and cover with foil.
  4. Heat beans and corn over medium heat until both are hot.
  5. Slice chicken. Serve chicken, beans and corn over rice.
  6. Add guac, sour cream, cheese or anything you like on a burrito!
